Hello! Today we are making these amazing pumpkin & apple spice muffins! They are perfect for Autumn. I love making a batch of these and they freeze well if you want to save some for another time. I found the recipe over at Liv B. She has so many wonderful Vegan recipes you should totally check out! You can either use canned Pumpkin or, if you dont have access to it, you can steam some pumpkin and then pure it.
Here is the recipe for Vegan spiced muffins
1 cup brown sugar
3/4 cup pumpkin puree
1/2 cup non-dairy milk
1/2 cup applesauce
1/4 cup vegetable oil
1 3/4 cups flour
1 tbsp baking powder
2 tsp cinnamon
1/2 tsp ground ginger
Optional: chopped nuts for top ( I didn’t use because I knew Molly would have some )
Preheat oven to 200 (fan oven). In a mixing bowl, combine sugar, pumpkin, non-dairy milk ( I used oat milk ), oil and apple sauce and stir to combine. In a separate bowl, whisk together flour, baking powder, cinnamon and ginger. Add dry to wet ingredients and stir to form a batter. Line 9 muffin cups with paper liners and divide batter evenly into the muffin cups. Sprinkle chopped nuts over the top if using. Bake for 20 minutes or until a toothpick inserted in the middle comes out clean or with a few crumbs.
Its as simple as that! These are super tasty. You can adjust the amount of pumpkin to apple sauce depending on your own taste!
